Well our weekend had been jam packed with activities as we have both the Momo's (the misters grandmothers, from NJ) and my SIL, Becca (from college in Springfield) in town for a long weekend. So needless to say it's been busy, fun, and filled with fabulous home cooked meals. On Friday, Momo D and Wyeth made us homemade Three Cheese Mac N' Cheese*. A recipe for all you food lovin' friends. 1 pound of Elbow Macaroni
5 Tablespoons of unsalted Butter
3 Tablespoons of All-Purpose Flour
4 cups of Whole Milk (room temperature)
3/4 Teaspoon Ground Mustard
1/2 Small Onion
8 ounces of White Cheddar shredded (3 cups)
4 ounces of Monterey Jack shredded (1.5 cups)
1/3 ounce Parmesan, grated (1/4 cup)
1.) In large pot boil salted water and cook macaroni according to package instructions. Drain.
2.) In pot melt 4 Tablespoons of butter over medium. Whisk in flour and stir frequently until mixture is a pale golden, approx. 4 minutes.
3.) While whisking add milk. Cook until boiling, approx. 6 minutes. Reduce heat and simmer, stirring till sauce thickens, approx. 10 minutes. Remove from heat and add Tablespoon of Butter, Mustard, Onion, Cheese. Stir until melted and smooth. Season with salt. Add Macaroni to sauce. Stir well.
4.) Transfer to large 3 quartz casserole dish and top with bread crumbs.
5.) Bake at 400 for 45 minutes or until golden brown.
