Grilled cheese and soup is one of my favorite meals. We like to switch things up a bit so we sometime make our sandwich a bit more gourmet with fancy cheeses. The mister spotted a recipe out there and modified it to our liking... and you know what, it was tastier than ever. Enjoy!

PARMESAN-CRUSTED GRILLED CHEESE
Approx. 15 Minutes // Makes 2
Ingredients
1 ounce of Parmesan
4 Slices of Wheat Bread
1/4 cup olive oil
1/2 tablespoon Dijon Mustard
4 teaspoons Apricot Jam
2 large slices of Grueye cheese
Romaine Lettuce
Directions
Finely grate Parmesan cheese onto plate. Brush one side of bread with oil and press into Parmesan, coating completely. Place bread cheese side down on work surface. Spread half the slice with mustard and the other half with jam. Assemble sandwich with bread, Grueye cheese and lettuce. Cook sandwich over medium heat until bread is crisp and golden and Parmesan is melted.
Soup of your choice, but we love tomato soup.
