FOOD : CHEESY CHICKEN & RICE CASSEROLE

We're all about simple, healthy, quick and tasty meals. We all love cheese and chicken so it was pretty much an instant hit. I shared a photo of this on IG a bit back and had people ask me about this recipe so here you have it. Enjoy and Happy Friday!

CHEESY CHICKEN & RICE CASSEROLE
Approx. 50 Minutes // Serves 4

Ingredients
1 can (10 3/4 oz) Cream of Chicken Soup
1 1/3 cups of water
3/4 cups uncooked long grain white rice
2 cups of fresh or frozen vegetables (we used frozen)
1/2 tep. onion powder
4 skinless boneless chicken breast (we cut ours in halves again to make 8)
1/2 cup shredded cheddar cheese

Directions
1.) Stir soup, water, rice, vegetables and onion powder in 12 x 8 shallow baking dish. 2.) Top with chicken. Season chicken in desired. 3.) Cover with tin foil and bake for 45 minutes on 375. Remove from oven and top with cheese. Recover and let cheese melt for 5 minutes prior to serving.
