MUSIC : HAIM

.

I was just introduced to the band Haim and I absolutely LOVE them! When I first listened to this one song, Forever (video below) I had thought it was actually a guy singing. Kinda a Michael Jacksonesque kinda sound but until I hunted to find a video did I realize it was a group of girls, sisters infact, and I was then a bit more excited to think yay a new good girl band to jam out too. COLLECTIONS : CAKE DECORATING TIPS

.

While home on visiting family, I inherited my cousins lovely collection of cake decorating tips (above). I love to bake, but I am no Julia Child... but sometimes when the mood strikes me I attempt my hand at sweet treats, cookies, pies or cakes. I'm pretty good at cooking all the unhealthy meals. These cake tips though will come in quite handy, now I just need a lesson or two on how to use them all. Do you bake? Any tips or tricks on how to decorate fancy cupcakes? I have two kiddo birthdays quickly approaching so I guess I better start my practicing. Happy Monday, and have a wonderful new week ahead! :)

FOOD : APPLE BROWN BETTY

APPLE BROWN BETTY
Approx. 1 Hour & 40 Minutes // Serves 6

Ingredients
4 to 5 slices white sandwich bread (about 4 ounces total), torn into large pieces
4 tablespoons (1/2 stick) unsalted butter, melted
2 1/2 pounds Gala apples (about 6), peeled, cored, and cut into 1/2-inch-thick slices
2 tablespoons freshly squeezed lemon juice
1/3 cup packed light- or dark-brown sugar
1/2 teaspoon ground cinnamon, plus more for serving (optional)
1/4 teaspoon ground nutmeg
Vanilla ice cream, for serving (optional)

Directions
1.) Preheat oven to 375 degrees. In a food processor, pulse bread until coarse crumbs form (you should have about 2 cups). Spread breadcrumbs on a rimmed baking sheet; bake until golden, 8 to 10 minutes. Let cool completely. Transfer to a bowl, add butter, and toss until coated. 2.) Meanwhile, place apples in a large bowl, and toss with lemon juice. Stir in sugar, cinnamon, nutmeg, and half the breadcrumbs. Transfer mixture to an 8-inch square (or other shallow 2-quart) baking dish. Sprinkle with remaining breadcrumbs. Cover dish tightly with aluminum foil. 3.) Bake until fruit mixture is bubbling, about 40 minutes. Then remove foil, and continue baking until breadcrumbs have browned and apples are easily pierced with a paring knife, 10 to 15 minutes more. Let cool at least 15 minutes before serving. Top, if desired, with vanilla ice cream sprinkled with cinnamon.

FOOD : CHEESY CHICKEN & RICE CASSEROLE

We're all about simple, healthy, quick and tasty meals. We all love cheese and chicken so it was pretty much an instant hit. I shared a photo of this on IG a bit back and had people ask me about this recipe so here you have it. Enjoy and Happy Friday!

CHEESY CHICKEN & RICE CASSEROLE
Approx. 50 Minutes // Serves 4

Ingredients
1 can (10 3/4 oz) Cream of Chicken Soup
1 1/3 cups of water
3/4 cups uncooked long grain white rice
2 cups of fresh or frozen vegetables (we used frozen)
1/2 tep. onion powder
4 skinless boneless chicken breast (we cut ours in halves again to make 8)
1/2 cup shredded cheddar cheese

Directions
1.) Stir soup, water, rice, vegetables and onion powder in 12 x 8 shallow baking dish. 2.) Top with chicken. Season chicken in desired. 3.) Cover with tin foil and bake for 45 minutes on 375. Remove from oven and top with cheese. Recover and let cheese melt for 5 minutes prior to serving.
