This seems so long ago, but right after Miss P was born one of the misters co-workers wives, Stephanie, generously brought us homemade Calzones. And boy were they yummy! Fast forward 2 years later and the mister decided to take a stab at them himself. We can't take credit for the recipe as the mister tracked down a recipe from Stephanie's husband but they were made and seem to taste the exact same. Yum! And enjoyed by all (well except Miss P who was undecided). Enjoy!

(Approx Time 35 Minutes // Makes 16)

2 Cups of Pepperoni
1 (16 ounce) package of Biscuit dough (tube of 8 biscuits) We used low fat wheat and divided each biscuit into 2 so you will have 16
1.5 Cups of Mozzarella Cheese
1 egg beaten
1 (14) ounce jar of Spaghetti Sauce (optional) I like mine plan ;)
Parchment Paper

On a floured surface, roll out 1 biscuit until circle is 5 - 6" in diameter. Dip you finger in a bowl of water and slightly wet the perimeter in the circle. Place approx. 1/4 cup of pepperoni along  with 1/8 cup of cheese on the bottom half of the circle. Leaving about 1/2 of the moistened perimeter free of filling. Fold the top half of the circle over the pepperoni and cheese. Using a folk press down the outer edge. Place Calzones on a parchment lined cookie sheet. Brush with the beaten egg over the tops of each. Bake at 350 got 12-15 minutes or until lightly browned. In sauce pan (or microwave) heat spaghetti sauce to serve with Calzones.
