St. Patrick's Day is only a day away, so are you hungry for more green cookies? These ones were by far my favorite of the two that we made. And I may have found myself snacking on them even when I really didn't need one because they were just that tasty. Enjoy & Happy weekend!

Approx. 40 Minutes || Serving 36 Cookies

1 pouch (1 lb 1.5 oz) Betty Crocker sugar cookie mix
1/2 cup butter or margarine, softened
1/2 teaspoon mint extract
8 drops green food color
1 egg
1 cup creme de menthe baking chips
1 cup semisweet chocolate chunks

1.) Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms. Stir in creme de menthe baking chips and chocolate chunks. 2.) Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet. 3.) Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.

St. Patricks Day is almost here and that calls for green cookies! I have two recipes for tasty mint cookies; this first one is a lighter fluffier cookie called a Chocolate-Mint Thumbprint. They were fairly easy to make, just a bit lengthy in time and prepping. But they are oh so yummy which surely makes up for everything else. I'll share the next cookie tomorrow. Enjoy and happy cookie making :)

Approx. 2 Hours + 15 Minutes || Serving 36 Cookies

1 cup butter, softened
1 cup powdered sugar
1 1/2 teaspoons peppermint extract
2 egg yolks
16 drops green food color
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup dark chocolate chips
3 tablespoons whipping cream
3 tablespoons butter
18 crème de menthe (Andes Mints) chocolate candies, unwrapped, cut in half diagonally

1.) Heat oven to 350°F. Line cookie sheets with cooking parchment paper. In large bowl, beat 1 cup butter and the powdered sugar with electric mixer on medium speed until light and fluffy. Beat in peppermint extract, egg yolks and food color until blended. On low speed, beat in flour, baking powder and salt. 2.) Shape dough into 1-inch balls; place 2 inches apart on cookie sheets. Using end of handle of wooden spoon, press a deep well into center of each cookie. 3.) Bake 10 to 12 minutes or until set. Reshape wells with end of handle of wooden spoon. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes. 4.) In medium microwavable bowl, microwave chocolate chips, cream and 3 tablespoons butter on High 1 minute, stirring frequently, until chocolate is melted and mixture is smooth. Fill each well with about 1 teaspoon chocolate mixture; garnish with candy piece. Let stand about 1 hour until chocolate is set.

Weekends are busy busy an packed with activities, errands, chores but we also try to find time to kick back and relaxing some. This weekend I enjoyed a thrifting run and found a few treasures, we watching Wreck it Ralph (it's been on about 5x now since we opened it) played a slew of games with the kiddos, read books, visited Cabela's to look at the taxidermy (which the kids love and is free entertainment), was lazy on the couch with the kitty, jammed and danced to some tunes and had fun hamming it up and buying flowers with miss P... oh and practiced my braiding techniques on her little locks. Hope your weekend was happy!

Happy Monday dear friends! I hope your weekend was wonderful. Well, I don't know much about this collection above which I spotted over on Things Organized Neatly, but I have always found coins so interesting and I just had to share them. There's obviously a variety of coins here and I just love those oval ones you can get from a souvenir shops while you may be visiting a zoo or other attraction. I actually have a small collection of those coins myself which I have been saving from little trips about with the kiddos. I also have been saving some other coins for the kiddos to look back on someday and admire vintage currency's. Do you collect coins?

Hello and Happy Tuesday! It's been a while but I hope you're all doing well. I have surely had a busy month filled with many ups and downs but I think it's all starting to level off again an I'm feeling like it's time to get back into a routine. Oh how I miss the blog, and I've have so much I wanted to share. I'm going to reevaluate some series, keeping the ones I am really enjoying and minusing a few things here and there to add room for some new items. All in all it will still be and look the same but I'm trying to manage my work, life, and time more effectively and do what feels right for this space. But to kick off today I wanted to share a "What I Wore" post. Sorry it's a bit late, but better late than never, right? Right! It's back from my Valentines Day, which I know is a while ago, but I had shot these photos that day and enjoyed wearing a bit of black and red striped attire. Have a wonderful day sweet friends!
