While out hunting First Fridays, I had spotted this amazing door! I love, love, loved the colors and couldn't help but snap a photo of it (larger photo below). An I secretly wanted to take it home with me but I didn't have any idea of how (in my little car) or what I would do with it just yet so I left it in hopes someone else would see it's potential and snatch it up instead. I'm all about pinching penny's when I can, and though I surely love visiting my favorite stores to buy new clothes, a large part my wardrobe is a collection of vintage (an newer) thrifted finds. I've lost a bit of weight since last Fall, and to buy new clothes for a a higher price tag, only to have them not fit in a couple months didn't make any sense to me, so I had been hunting weekly, an sticking to a lower budget, to find new pieces to update my closet. I pass on a lot of things, and sometimes second guess my decision an hope it's still around when I return the following week, or better yet on sale, but either way restyling my wardrobe has never been easier. I was pretty pleased that this outfit (belt, shoes, dress) from head to toe, was all thrifted and surprisingly under $10. And of course a new outfit needed a new hair color... which I think I'm really liking the fuchsia and it may stick around for a while. Happy weekend dear friends!

Well I feel silly saying I've never had couscous before but hey "I've never had couscous before", haha! I dunno why I've never had it but this recipe called for it an it was actually quite tasty. I've been trying my best to eat a little healthier, less pasta's, breads and cheeses, but boy do I love my carbs. It's really REALLY hard… I won't lie… but, with a little bit of online hunting, new recipe can be found, yay! An as I'm working on experimenting with foods outside of my comfort zone (like avocados and mangos - I know, I know, they're good for me but have always weirded me out some), have helped with some new tasty dishes! This recipe was adapted from one which you'd grill, and though I opted for no grill, I'm sure it's equally tasty both ways. Oh and we forgot the lime juice but I'm sure a few dashes of lime juice would add some extra punch too. Enjoy!

Approx 30 Minutes || Serves 4

Vegetable oil cooking spray
3 cups baby spinach
1 cup couscous
1 pound tiny shrimp (frozen peel and eat bag)
1/2 cup chopped fresh cilantro, divided
1 tablespoon extra-virgin olive oil
3/4 teaspoon salt
1 large mango, peeled and diced
1 medium avocado, diced
2 small roma tomatoes, diced
1/4 cup chopped red onion

Over medium heat sautée shrimp. Remove from heat, strain, remove tails, set aside. Cook 1 cup of couscous per directions on box. Over medium heat sautée spinach, once cooked combine with couscous. In a medium bowl, combine shrimp, 1/4 cup cilantro, oil and salt, mix well. In another bowl, combine remaining 1/4 cup cilantro, mango, avocado, tomato, onion, mix well. Assembly on a plate - couscous & spinach on bottom, layer veggies and top with shrimp.

There's no hiding that I'm a bit of a geek. If you met me in person you may not realize this instantly, but my love for vintage goes far beyond knick knacks and collectable bowls and glassware that I've shared here on the blog. I don't have them on display but I collect childhood toys, cheesy 80's music and you guessed it games (board games mostly, but I video games too!) I was never good at video games (I'll admit it) though. I probably thought I was as a child, I'm sure my brothers chuckled how much I stunk, an as the years went by I never got any better, hahaha! But all in all, I always loved the characters, Mario, Kirby, MegaMan, Ms Pacman, etc... you name it and I liked it. Well I came across this stop motion video a few months ago and instantly was sent into a time lapse and thought it's to amazing not to share. This artist, Michael Birken, spent months and many long hours arranging Post-It Notes (yup you read that right!) to recreate the beloved childhood video games you'll see below. It's a pretty awesome video, and the idea of stop motion just amazes me!!! Enjoy!

I don't own much in the color green. My wardrobe is filled with a lot of blue shades or blacks but, green, not so much... I'm not to sure why not as I do love the color, but this dress had recently caught my attention at the thrift and I figured I would give it a shot. Something about it says army nurse to me. I'm guessing it's the olive color, and if not that, then maybe the button down style or style of the dress in general, but all in all, I think it's a new favorite. Oh and my goofy photos you're spotting... I've been excited it's so nice out lately an been doing a few happy dances about it... also I've been brushing up on some of my moves for a wedding come October. Are you celebrating 4th of July tomorrow with some fireworks and sparklers? I may have added red into my hair because I was feeling a wee patriotic :) Hope your weeks a short one, and if not, I hope it's been a good one so far.

Well I'm not one for really celebrating my birthday. I kinda dodge the day in general if I can an I really don't care to make such a hype over it as it's just another day... I stopped counting the years a while back, but it surely hit me on Friday about getting older as I had to renew my license (woohoo I love the dmv, NOT!) and the man at the counter asked my age instead of birth year and I had to pause an do some quick addition to think about it, but I guessed the right number, phew. All in all, this weekend was wonderful though, and filled with a bunch of activities and spending time with the people I adore. I couldn't have imagined it to be more perfect. We hit up the local donut place, the farmers market, saw Monsters University (which was awesome btw), went swimming (in a kiddie pool and big pool), played outside, jumped a hop scotch, laughed at out jump rope attempts, played with sidewalk chalk, blew bubbles, made and wrecked sand castles, went out to eat, took a bike ride, had a picnic, played at a playground, ate some fancy ice cream, thrifted, record hunted (an purchased a few), visited with in-laws, an received a few amazing cards and generously thoughtful gifts. It was surely a weekend I won't forget an now it's time for another short 3 day on/4 day off week, so I may be looking forward to the weekend ahead already, hahaha!
